DESCRIZIONE

The "Manzo all'olio" (Olive Oil beef) is a dish known all over Italy originated in the town of Rovato around 1500. It's a very ancient dish. Its origins date back to the first half of the 16th C, found in the Recipe Book of Mrs Veronica Porcellaga (1554-1593). In this dish beef is the main ingredient, and the product that symbolizes the town of Rovato. Back during the Republic of San Marco, the open market in Rovato was the most important on the way between Venice and Milan and here merchants from Liguria came to bring their produce, such as olive oil and anchovies.
